In addition, we opened up a manufacturing agreement with a BRC certified egg drying facility for the production of egg powders in Europe.

Whole egg powders

Whole egg powder (WEP) replaces liquid whole egg. This is especially useful in industrial bakeries. A large range of cakes and biscuits can be made with whole eggpowder.

Egg white powders

Dried egg whites are viewed as more convenient than fresh or liquid egg whites, as the dried version has a longer shelf life and is shelf stable.

How to dissolve egg powders?

The best way to dissolve whole egg powder or egg yolk powder is to use a mixer.  Let the water circulate while adding the powder gradually.

To dissolve whole egg powder or egg yolk powder with a Hobart mixer or alike it is recommended to mix equal amounts of powder and water and stir until a homogeneous mass is acquired. Add the rest of the water gradually while stirring. If necessary leave to hydrate for 5-10 minutes. Then it is ready to use. If the egg powder is to be mixed with other ingredients, i.e sugar then this can be mixed with the egg powder prior to use and a better solubility will be obtained.

How is egg powder produced?

This egg manufacturing process part consists of spray-drying a thin layer of egg white, egg or egg yolk. This is done in a room with a higher temperature that enables the water to evaporate out of the eggs. After the liquid egg is completely dried, it is grinded and packed in a hygienic way. The powder is placed in a bag and sealed for transport.

How much egg powder is equal to liquid egg?

Whole egg powder
100 g of whole egg powder dissolved in 300 g of water corresponds to 400 g fresh whole egg (approx. 8 shell-eggs).

Egg yolk powder
100 g of egg yolk powder dissolved in 125 g of water corresponds to approx. 225 g liquid egg yolk (the yolks from approx. 12 shell-eggs).

Egg white powder
100 g of egg albumen powder dissolved in 700 g of water corresponds to approx. 800 g of fresh egg white (the albumen from approx. 25 shell-eggs). In some applications up to 900 g of water can be used with 100 g of egg albumen powder.
